Custom Course Creation for Graduate Level Students

Developed in conjunction with the University of Illinois Urbana-Champaign:

Nutrition Counseling and Treatment for Eating Disorder was created in response to a significant gap in formal education on eating disorders within dietetics programs. While eating disorders are complex and increasingly prevalent, most universities offer only a brief 90-minute lecture on the topic—typically embedded within a broader nutrition course. This limited exposure is insufficient to prepare future dietitians to effectively treat and counsel individuals with eating disorders.

The development of a dedicated course was long overdue. As the demand for knowledgeable, skilled nutrition professionals in this area continues to grow, this course aims to equip students with the foundational understanding and tools necessary to support this vulnerable population.

Each course includes four engaging modules and optional real-world assignments to deepen your learning. Adapted from a graduate-level course created by Flavia Liebel MA RD LDN in collaboration with the University of Illinois, both courses are taught by Flavia herself.

Why the Curriculum Was Developed

Flavia’s interest in eating disorders began long before her professional career. During graduate school, she had already developed a deep passion for the field, inspired by witnessing a close friend’s struggle with an eating disorder. However, in the late 1990s, education on eating disorders was limited. Aside from brief mentions in medical nutrition therapy courses, there was little formal instruction.

Fortunately, that is no longer the case. In 2023, the University of Illinois recognized the need for comprehensive education on eating disorders and invited Flavia to develop an eight-week, two-credit, graduate-level course for their online nutrition program. The feedback from students was overwhelmingly positive, which inspired the university to adapt the course into 2 continuing education programs for dietitians.

Resources for High Schools

  • Partnering with educators to develop Health Class lessons on nutrition and on eating disorders that are non-triggering, as well as lessons that promote body positivity.

  • Sport specific and age-appropriate nutrition lectures for all sports teams.

  • Education for nurses, coaches and school counselors on how to recognize an eating disorder in their students/ athletes, and what the next step is.
